Bartender Yuki Yamazaki is the creator of The Japanese Bitters, the world's first made-in-Japan bitters.

Mr. Yamazaki was a bartender in Toronto, Canada for about 2 years around 2010-2012.
His last visit to Canada was in 2015, so it has been about 10 years since his last visit to Canada.
How has the Canadian bar scene changed since then?
This time I visited Montreal and Toronto in the east and Vancouver on the west coast, but this was my first time in Vancouver, so I can only give you my impression of the bar culture in the big eastern cities.For example, 10 years ago, if a Japanese bartender had skills, he or she would have been very useful in any bar.Just shaving round ice would have been enough to make everyone say, 'Wow!(laughs).
The level of skill, the quality of the ice, the bar tools, the variety of ingredients, the balance and flavor of the cocktails that came out, all of these things have improved dramatically," he said.
