Mr Motonaga Tatsuya of Iseya Brewery, the creator of Japan's first amaro, SCARLET, explained in his lively Kansai dialect.
Mr Motonaga is a former bartender born and raised in Osaka.
He has worked at Bar Caol Illa, a malt bar in Shibuya, Tokyo, Bar Ben Fiddich in Shinjuku , Japanese Sake in Taipei, Taiwan, Golden Promise and Whiskey Cat in Beijing, China, among others.
At the same time, he has international experience, having worked as an event bartender in Europe for a time and visited more than 70 breweries in Italy, Scotland and other parts of Europe.
Why did Mr Motonaga, such a skilled bartender, start making amaro?
