Alessandro Palazzi, who has worked in prestigious hotels in London and Paris, became the head barman of DUKES BAR in 2007.
The bar's interior and lighting have remained unchanged since before Alessandro Palazzi arrived (probably since the establishment of the bar).
With so many celebrities coming to the bar, privacy for the guests is of the utmost importance.
However, since I became head bartender, I have made some bold changes," says Alessandro.
One is the dress code.We don't allow shorts or flip-flops, but as long as it's smart casual and doesn't make other guests uncomfortable, it's fine.The basic premise is that guests should feel relaxed and comfortable."
"Also, in the past, only the head bartender made cocktails in front of the guests, but we have flattened out the organization of the team.Now all six bartenders make cocktails, and sometimes I do the dishes.The atmosphere of the team is connected to the atmosphere of the restaurant, so while there is a sense of tension, we try to create a flat and open-minded organization.
