Let's hear a profile of Aya Iwamoto, who is still a newcomer as a mom, but has had a long career in the restaurant industry.
Having lived in various cities such as Miami, New York, and Paris, Iwamoto's interest in bar culture was sparked by absinthe and eau de vie.
In the process of studying wine for her restaurant service career, she gained knowledge of various spirits and liqueurs and became fascinated with the history and cultural background that created them.
She left her long life overseas and jumped into the Japanese food and beverage industry, but because the industry is rooted in the relationships and structure of a vertical society, there were times when Iwamoto, who has a global mindset, felt constrained and absurd.
One person who respected and nurtured Iwamoto's individuality was Toshihiro Fukami, the corporate bartender of the HUGE Group and currently the distillation manager of "NUMBER EIGHT DISTILLERY".
It was Mr. Fukami who served her when
she visited "RESTAURANT DAZZLE" in Ginza that inspired her to choose bartending as a career.
