We asked Mr. Goshi Kadokura, a Chinese liquor explorer, about the basics of baijiu in order to make the most of it in bars.

A Shanghai cocktail bar that focuses on Chinese liquors, Kadokura told us HEALER BAR, which opened in 2016, offers hundreds of Chinese yellow, white, rice, and herbal liquors and more than 50 cocktails based on these liquors. The names of the drinks are based on Chinese classics and historical episodes, and the glasses have unique visuals. The glasses are also uniquely designed, making it look like a "Chinese liquor museum.
Baijiu attracts the attention of whiskey lovers and wine connoisseurs.
Along with whiskey and brandy, baijiu is one of the world's three most popular distilled liquors.
While it is well-known in Chinese restaurants where you can enjoy the authentic, un-Japaneseized taste of "Gachi-Chinese" and "frontier Chinese," it is still not well-known in Japanese bars.
